  • 1 lbs carrots, washed and juiced and pulp reserved
  • 1-1/2 lbs sweet potatoes (about 2 small), peeled and chopped into 1-inch pieces
  • 1 inch cube of fresh ginger, juiced
  • 8 cups chicken broth, (low sodium)

Carrot Ginger and Sweet Potato Soup

Try this soup on cool autumn days to both warm up and give your self an energy boost.

In a medium sized pan, over medium heat, melt butter in the pan and toss in the chopped onion. Cook until the onion is translucent and tender.

Meanwhile using your Juiceman® Compact Juicer, juice your carrots, apple, and ginger reserving all the pulp for adding later into the soup.

After onions are cooked add chicken broth, salt, pepper, honey, sweet potatoes and curry and mix well and allow to boil. After broth is brought to a boil then add your carrot, apple and ginger juice with the reserved pulp and mix well to combine and bring to a boil.

Allow to simmer until potatoes are tender or about 15-20 minutes. Serve with an extra dash of curry on top and enjoy!
